I heard it’s not good to force yourself doing something you hate. Have you never push yourself to do something you actually hate doing? Today I hated exercising at the gym, but I stayed there till the time I had previously set for this today’s gym. I almost ended in tears, no kidding, just tired I would say… Then I walked home and actually felt great. I decided not to take the bus and walk all the way – it’s alright it’s a 40 mins walk more or less. The funny part of the story is that when I got home, I really felt like going for some lenghts in the pool and I did. I slept very well and felt really good pushing myself even though I really hated these push-ups….

The RED PEPPER soup


Simply healthy and delicious.

Preparation time: 15 mins
Cooking time: 35 mins

Ingredients:

  • 2 large red peppers, halved
  • ½ teaspoon olive oil
  • 1 small brown onion chopped finely
  • 1 cup cup chicken stock
  • 1 cup of vegetable juice
  • 1 cup water
  • ½ teaspoon sugar
  • ¼ cup low-fat plain yogurt (60ml)
  • 1 teaspoon chopped fresh chives

Chargrill the red peppers, skin side up, under a hot grill until the skin blisters. Peel away skin and chop peppers. Heat oil in a large saucepan; cook onion and red peppers, until onion is soft.

Stir in stock, juice and the water. Bring to boil, simmer covered for approximately 20 mins or until red pepper is soft. Blend or process mixture until smooth and return to pan. (Stir in sugar if you wish).

This delicious and healthy soup can serves 2.
